Is La Loba at 1 Hotel Seattle Worth the Visit?
Short answer, yes.
La Loba is a Spanish Mediterranean restaurant inside 1 Hotel Seattle, and it’s one of those spots that just feels special the second you walk in. The menu blends Spanish influence with fresh Pacific Northwest ingredients, and everything that comes out is beautiful and actually worth eating, not just looking at.
If you can’t get a reservation, which is pretty common, don’t skip it. Grab seats at the bar. You still get the full experience, and honestly, it might be even better being right in the middle of it all.
One of the best meals I’ve had in Seattle lately.

Some of the best nights happen when the plan doesn’t go exactly how you thought.
For my birthday this year, Mick and I decided last minute that we wanted to do something a little special. Nothing too overthought, just somewhere we could go, sit, and enjoy the night.
We landed on La Loba inside 1 Hotel Seattle, a spot I had been hearing about for awhile.
We called. Fully booked. Of course.
On a whim, we asked about the bar. Two seats had just opened up. We took them.
And honestly, I’m so glad we did because it ended up being a great dining experience!
Let’s start with the space. If you haven’t been inside 1 Hotel yet, it’s worth going even if you’re not staying there. It has that perfect mix of being elevated but still grounded. Very Pacific Northwest. Lots of natural wood, greenery, soft lighting, textures that feel warm instead of sterile. It’s one of those places where you walk in and immediately feel like okay, this is nice, I can relax here.
La Loba sits right inside that environment and carries the same energy. It feels intentional without feeling stiff. You can tell there’s thought behind everything, but it’s not trying too hard. It just works.
We decided to go with the tasting menu since it was our first visit, and I’m glad we did. It’s definitely a full experience. This is not a quick dinner. You’re there for a couple hours, and it kind of forces you to slow down in a good way. Something I think we all need more of.
Every course came out beautiful, but more importantly, it was actually good. Like genuinely good, not just pretty. There were a few dishes where I immediately thought, I would come back just for this. And that’s usually my test.
That said, I already know next time I go back I’m ordering off the regular menu because I want to revisit a few favorites and enjoy a larger portion, lol. The tasting menu is great for the experience, but the menu itself has some standouts I want to spend more time with - and I'm a sucker for anything with caviar!
Now let’s talk about the bar seating.
If you’re trying to get in and can’t get a table, ask for the bar. Don’t think of it as a backup plan. It’s actually a completely different experience in the best way. It feels more relaxed, more social, and you’re right in the middle of everything. Watching the drinks come together, hearing the conversations around you, just being part of the energy of the room.
It also makes the whole night feel a little less formal. You’re sitting side by side instead of across from each other, which sounds small but changes the vibe. It felt easy. Fun. Exactly what we needed.
And this is the part where I tie it back to real estate, because this is honestly why I love Seattle.
People move here for jobs, for schools, for opportunity. But what keeps people here is the lifestyle. It’s nights like this. It’s having access to really good food, thoughtful spaces, and experiences that feel elevated but still approachable.
Seattle has a seriously good food scene, and it’s one of those things that doesn’t always get enough credit unless you live here and actually experience it. You can go from casual neighborhood spots to something like this within a short drive. There’s so much range.
When I’m working with clients who are relocating, this is always part of the conversation. Not just where you’re going to live, but how you’re going to live. What your weekends look like. Where you go for dinner. Where you celebrate birthdays. Where you bring friends and family when they come into town.
La Loba is one of those places I would bring someone and say this is part of what makes Seattle so special.
It’s not just the food. It’s the space, the feeling, the experience of being there.
So if you’ve been thinking about trying it, go. Plan ahead if you can, but if you can’t get a reservation, take the bar seats.
It might actually end up being the better move.
